Mint Refreshes Chocolate Chip Cookies

1 10-ounce package (1 1/2 cups) Nestle Toll House mint flavored semi-sweet chocolate morsels, divided
1 cup all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter, softened
6 tablespoons sugar
1 egg

Melt over hot (not boiling) water, 1/2 cup mint flavored semi-sweet chocolate morsels; stir until smooth, set aside.
In small bowl combine flour, baking powder, baking soda and salt; set aside. In large bowl combine butter, sugar and vanilla extract; beat until creamy. Beat in egg; blend in melted morsels. Gradually add flour mixture. Shape dough into ball and wrap in waxed paper. Chill in refrigerator about 1 hour.
Preheat oven to 350, on a lightly floured board or pastry cloth, roll out dough to 3/16 inch thickness. Cut with a 2 inch round cookie cutter. Re roll scraps, place on ungreased cookie sheets. Bake 8 to 10 minutes. Cool completely, dip 3/4 of each cookie into mint chocolate glaze, shake off any excess glaze. Place cookies on waxed paper lined cookie sheet. Chill in refrigerator until glaze sets.

Mint Chocolate Glaze:
Combine over hot (not boiling) water, remaining 1 cup mint flavored semi-sweet chocolate morsels, 1/4 cup vegetable shortening, 3 teaspoons water; stir until morsels are melted and mixture is smooth. Remove from heat but keep mixture over hot water. Makes about 3 1/2 dozen 2 inch cookies.

Keep refrigerated until ready to serve.
