Today we made oatmeal cookie for our Uncle Henry, which are his favorites. Grandma always had this oatmeal mix on hand at home, in case she ever had to whip up cookies quickly. The mix is great for kids to use when they want to bake up a batch, all you do is add eggs, and vanilla and they are ready to bake. We made two batches today one with raisins for Uncle Henry who is visiting this week, and one with chocolate chips for everyone else (Rosanna and I are not fans of raisins in things).After making two batches we still had lots of mix left for the next time we get a craving for oatmeal cookies.

Oatmeal Cookie Mix (Dorthy Cookies)
3 cups flour
1 tablespoon
baking powder
2 teaspoon
baking soda
1 teaspoon
salt
2 cups
Crisco
1 cup brown
sugar
1 cup sugar
Add 4 cups
of oatmeal and mix.
Keep in a
glass jar until you want to make cookies.
To make cookies: Mix 2 cups of dry ingredients with 1 egg
and 1 teaspoon vanilla.
Bake for 10 minutes at 350 degrees.
Optional ingredients: peanut butter, chocolate chips,
raisins, nuts. Two cups of mix made a dozen cookies.
