Italian Lemon Cookies

Italian Lemon Cookies

Cut recipe in half, list below is the full recipe
6 eggs
6 heaping tablespoon spry (vegetable shorting)
12 level teaspoon baking powder
1/2 cup milk
1 cup sugar
2 tablespoons lemon extract
2 tablespoons lemon juice
enough flour to roll (6 cups)

Cream sugar and shortening beat in eggs. Add mixed dry ingredients. Alternate with mild, add 2 tablespoons lemon juice and 2 tablespoon lemon extract (will be a sticky dough)
Roll out on a floured surface and cut into 1 1/2 " circles (we used a biscuit cutter) Bake in 375 degree oven on a greased cookie sheet for 8-10 minutes until golden brown.

Frosting
1 box confectioners sugar
1 tablespoon butter or margarine (melted)
1 teaspoon lemon extract
use milk or water to make soft frosting



we first rolled dough into a tube then cut slices, they didn't turn out as good.
