Watermelon Cookies
From Better Homes and Garden June 1988
2 cups flour
1 1/2 teaspoon baking powder
1 teaspoon salt
6 tablespoons butter
1/3 cup shortening
3/4 cup sugar
1 egg
1 tablespoon orange juice or milk
1 teaspoon vanilla
red food color
Mix all ingredients together. Chill for 1-3 hours or until easy to handle.
Roll on floured board (surface) cut with 3" round cookie cutter then cut in half. Place on an ungreased cookie sheet. press a few chocolate pieces (miniature semisweet chocolate chips) into each. Bake in a 375 degree oven for 8 to 10 minutes. Do not brown. Remove cool on a rack
In a small shallow bowl stir together 1 egg white and 1 tablespoon water, brush the edge of each cookie. Sprinkle with green colored sugar on edges. Dry on racks. Makes about 60.
