Rocky Road Walnut drop
1/2 cup butter
2/3 brown sugar
1 teaspoon vanilla
1 egg beaten
1/2 cup chocolate chips melted
1/2 cup nut
1 1/2 cups flour
1/2 teaspoon soda
1/2 teaspoon salt
1 teaspoon instant coffee powder
1/2 cup milk
12 to 14 large marshmallow (or mini)
60 to 80 walnut halves
Cream butter, sugar, vanilla, mix until fluffy. Beat in eggs add melted chocolate chips, add nuts and mix well. Sift flour with soda, salt and coffee. Add to creamed mixture along with mild. Drop by rounded teaspoon onto greased sheet. Bake at 350 for 10 minutes or just until cookies test done, don't over cook. The cookies should be moist. Cut marshmallows crosswise into thirds as soon cookies are baked top each one with marshmallow slice and return to oven a minute to set marshmallow remove cookies to wire rack. Top each with a half walnut pressing down lightly to make it stick when cookies are nearly cool place each over waxed paper and carefully spoon warm chocolate frosting let cool.
Frosting
1/4 cup butter or margarine
1/3 cup milk
1/2 cup chocolate pieces
salt
1 teaspoon vanilla
2 1/2 cups powder sugar
Put chocolate, butter, milk in top of double boiler stir until smooth, stir in powder sugar and vanilla. Spoon the warm frosting over the cookies.
