Chicago Bars

Chicago Bars

1 3/4 cups flour
1/2 teaspoon baking soda
3/4 cups butter or margarine softened
1 cup packed brown sugar
1 1/2 cups uncooked quick oats
1 jar (12oz) strawberry or raspberry jam (not jelly)

Stir together flour and baking soda; set aside.
Mix butter and brown sugar in medium bowl until light and fluffy. Stir in flour mixture until well blended. Min ix oats with wooden spoon dough should be crumbly at this point. Press 1/2 dough into greased 12x9 inch pan. Spreads with jam. Crumble reaming dough over top; pat lightly to cover. Bake in preheated 400 degree oven 20 to 25 minutes or until lightly browned. While warm cut into 2x1 1/2 inch bars and remove from pan.  (we added chocolate chips to half of it made it even better).
Makes 30 bars.
