Ricotta Sweet Pie

Ricotta Sweet Pie

Dough
4 Eggs
2 cups sugar
2 sticks margarine
1 teaspoon vanilla
3 cups of flour

Mix together in a large bowl till very creamy.

Filling
2 lbs Ricotta
4 egg whites (save yolks)
1 tablespoon anise or lemon extract
1/2 cup sugar

In a separate bowl mix together filling ingredients.

Heat oven to 350. Spread 1/2 dough on a 15"x10" un-greased cookie sheet. Spread filling over dough. Then spoon rest of the dough on the top of the filling.

Bake for 1/2 hour. Take it out and brush top with egg yoke (left over from egg whites), put back into oven until golden brown (5min). Sprinkle with confectionery sugar before cutting into squares.
