Pumpkin Swirl
Squares
2 cups
all-purpose flour
1 teaspoon baking
soda
2 teaspoons
baking powder
2 teaspoons
cinnamon
½ cups oil
1 3/4 cups sugar
1 16oz. can pumpkin
3 large eggs
1 8oz package
cream cheese, softened
Combine pumpkin, 1 ½ cups sugar, oil and two (2) eggs, mixing
until well blended. Add combined dry ingredients; mix well. In a separate bowl combine cream cheese and
remaining sugar and egg, mix until well blended. Spoon pumpkin mixture into
greased and floured 15x10x1 inch jelly roll pan. Spoon cream cheese mixture
over pumpkin batter. Cut through batter with knife several times for marble
effect.
Bake at 350 degrees 25 to 30 minutes or until wooden pick
inserted in center comes out clean. Cool; cut into squares. Makes approximately
2 dozen.
