Today we made Italian cookies, better known as biscotti. These are Grandmas favorite, still to this day after every meal she ask "Is there cookies?" She can't be finished with a meal till she has had her cookie. Today before baking we had told Grandma that we were baking biscotti and she asked us to read the recipes for her. After reading the 5 recipes we were about to tackle Grandma decided she would like to stay up for a bit, normally Grandma would just like to go lay down after finishing a meal, so we wheeled her into the kitchen where she said "Make the Lemon cookies first!" when ask why she responded "Because I like lemon." So we started our baking with Lemon Pistachio biscotti, followed by, Espresso, Chocolate, Gingerbread and then original flavored biscotti with anise. Grandma didn't stay in the kitchen for more then 10 minutes before having to go lay down, but just knowing she was there you couldn't help but feel joy knowing that being a part of her families baking means so much to her still to this day. We Made these cookies in honor of Grandma's 92nd birthday which is January 23, Happy Birthday Grandma Blaauw we love you!
