Italian Cookies (Biscotti)

Italian Cookies (Biscotti)
1 ½ cups sugar
2 cubes margarine
4 eggs
Anise (either 2 teaspoons anise flavoring or 1 teaspoon of Anise flavoring and 1/8 teaspoon anise oil)

Combine and mix well.

3 cups flour
3 teaspoons baking powder
Mix together.

Add to above mixture and mix until smooth.

1 Egg yolk
Water
                Beat egg yolk into enough water to make an egg wash.

Use large cookie sheet.
Cut 3 strips of aluminum foil to fit lengthwise on cookie sheet.
                Make sure they are 2 ½ inches apart

Drop dough by tablespoons full down center of each strip of Foil, leaving dough in uneven drops as placed on foil.

Brush each roll of dough with egg wash until each roll is smooth.

Bake @ 350 degrees for 15 to 20 minutes or until light brown.

Remove From oven. Remove from foil.

Cut into diagonal slices and replace on cookie sheet. Bake another 7 minutes.
